Rum – Bacardi is 150 years old !

“I love a Cuba Libre”.

There it is. I’ve said it.

There may be a few “Little Britain” fans out there that will remember Daffyd Thomas ordering one at the bar and laughing, but for me it’s still a perfect tall, icey-cold, limey refreshing classic that I keep on coming back to. Daffyd may have been strange but he knew his cocktails.

This year Bacardi is 150 year old so if its been a while there is no time like the present to remind yourself of the classic taste.

Happy 150th Birthday Bacardi !!

Original BACARDI Cuba Libre

2 parts BACARDI® Superior Rum
4 parts COCA-COLA®
2 Lime Wedges

Fill a Highball glass with cubed ice. Squeeze & drop a fresh lime wedge into the glass. Pour in BACARDI Superior Rum and top with chilled COCA-COLA®, ideally bottled. Stir gently. One of the world’s favorite cocktails, a simple, perfectly balanced mix. The squeeze of the lime makes all the difference. Do this first, over the ice, then add the BACARDI Superior Rum.

Cachaca – A taste from Brazil

It’s been a while since the last cocktail post and with Christmas so very close it’s time for another. Today is the turn of the Caipirinha.

Now the national drink of Brazil the Caipirinha, meaning ‘country peasant’ was once drunk by those working in the sugar cane fields.

This is one of those drinks I don’t make very often, but when I do after the first taste you always wonder why the hell not !


2 shots of Cachaca
1 lime – cut into cubes
3 teaspoons of caster sugar

Muddle all of the ingredients together in a shaker. Add cubed ice and shake hard until the ice is all broken.  Pour into a glass and top up with more ice.

Why not stick a bottle of Cachaca on your Christmas list this year. Hopefully if you are not on Santa’s naughty list he will be generous and you can treat yourself to something different.

Gin – Are you ready for a creamy cocktail ?

I love a cocktail or three, but something I don’t do at home enough is make egg-white creamy cocktails. OK, I know at this point some of you are thinking ‘Hang on, an egg in my cocktail…..I don’t think so’, but PLEASE read on and trust me.

Recently we’ve been working with JJ and his team from the London Cocktail Club on a new iPhone App. You’ll will love the app but more to the point, you’ll adore his cocktails. If you are ever passing Goodge Street in London stop by and try a cocktail or some canapes.

The great thing about the app is JJ will show you what the cocktail should look like, and instructions on how to make them. So here goes.

We are starting with the simple but striking
Clover Club. With the addition of a mint leaf at the end you have a Clover Leaf – so two cocktails in one.

Clover Club

2 shots of Gin
1 shot of Grenadine
1 shot of fresh lemon juice
1 egg white

Add all of the ingredients to a s shaker and shake hard WITHOUT ice to emulsify the egg. Now add ice to the shaker and shake hard again.

Strain into a chilled martini glass and watch it separate. A great color, a lovely creamy drink and a party winner.

Rum – Honey Daiquiri

So summer came and went and now at the beginning of Autumn I’m catching up on some great drinks we were able to make while the sun was out.

During the summer I was very lucky to receive an amazing gift from a friendly local bee keeper.

An entire frame of organic honey ! Beautiful to look at even before you slice off the top wax and watch the golden nectar drip from the frame.

So with local honey in hand we set about to make a Honey Daiquiri. A daiquiri is super simple drink, and after making your first it will be on your ‘favorites list’ for all time.

We are substituting the 2 spoons of caster sugar normally in a daiquiri for fresh honey.

Honey Daiquiri

2 shots of superior white rum
1 shot of fresh lime juice
2 spoons of fresh runny honey

In a shaker add the rum and honey. Now stir and try to dissolve the honey as best you can. Add the lime juice then using 1/2 cubed and 1/2 crushed ice, shake the cocktail very hard. Fine strain this all into chilled martini glass.

A massive ‘Thank you’ to our local Suffolk bee keeper. Delicious.

Tequila – Mango Margarita

‘Mango, Mango, Mango’…..

On ‘Thirsty Thursday’ around the witching hour of 6pm you’ll hear this screamed around our house.

We love a great margarita, but go to the local shop and get some mango juice or mango puree.

There’s something about a mango margarita !
The lime, the salt, and with this mix the hit of mango that makes this drink for me….sweet.

Mango Margarita

2 shots of Gold Tequila
2 shot of Fresh lime juice.
2 shots of Cointreau
2 shots of Mango juice or mango puree.

Shake all ingredients in a shaker with ice.  Using the freshly squeezed lime shell, wipe the shell around the rim of the glass. Now upturn and dip the glass rim in salt. Next fill the glass with ice & strain the shaker into the glass.

That’s it ! Now Mango, Mango, Mango.

Vodka – Bloody Mary

With all this rain my garden has gone bonkers!

Beans galore, sweet-corn coming on and celery now young and ready for the picking.

I love a good salad but I prefer a great Bloody Mary. The spicy red mix wouldn’t be the same without an oversized stick of crispy celery to stir in my drink and crunch down on.

So using up the last of my Adnams Vodka here is a great Bloody Mary.

Make this, take a sip and pretend you are in Harry’s Bar – New York.

Bloody Mary

2 shots of Vodka
4 shot of Tomato Juice
1/2 shot Fresh Lemon Juice
Dash of Tabasco
4 dashes of Worcestershire sauce
Pinch Salt
Pinch Black pepper
1/2 tsp creamed horseradish ( optional )

Add all ingredients to a shaker and shake hard with plenty of ice. Strain into a highball glass filled with ice.

Remember to garnish your glass rim with salt & pepper and don’t forget your celery stick !
